Sparkling Wine/Champagne
Champagne and most other sparkling wine is usually made from three grapes. Chardonnay also responsible for many of the world’s best white wines, Pinot Noir the great red grape of Burgundy and Pinot Meunier another red grape. The fact that the winemaking process then magically produces a white sparkling wine when two of the grapes are red adds wonderfully to the mystic of the world’s favourite celebration wine! Vintage Champagne is only produced in a few select years when the grapes are of good enough quality to produce arguably the best sparkling wine on the planet.

RED WINES
Merlot
“Merlot is a juicy grape, with supple smooth, silky, blackberry, plum, red wine gum and fruitcake flavours. As Merlot is usually oak aged, the fruit flavours are often accompanied by a touch of sweet wood-smoke barrel nuances.” Matthew Jukes
* Chile is making Carmènere it's own. "An old Bordeaux variety now virtually extinct in France. Widely used in Chile where until recently it was mistaken for Merlot." Not surprisingly it tastes similar to Merlot with an intriguing twist. Hugh Johnson

Pinot Noir
“The Red Burgundy grape capable of producing divinely scented, gorgeously fruity expressions of place but often unwilling to do so. Pinotage
This grape is a cross of Cinsault, a grape used mostly for blending in the Rhone, and Pinot Noir, the great red grape of Burgundy. It is grown almost exclusively in South Africa. Abraham Izak Perold a Professor at Stellenbosch University successfully crossed the varieties in 1925.
"Pinotage is an earthy, spicy, deeply coloured grape with tobacco and plums on the nose, crushed blackberry fruit on the palate and a hearty, full, savoury finish."
Matthew Jukes

Gamay
One of the distinct features of wines made from Gamay grapes is its fruity flavour, scent, and strong likeness to Pinot Noir. When you smell this wine, you will get the scent of cherries, pears, bananas and oddly enough bubblegum. It also has a hint of wood in the scent because it is aged in oak casks.

BIO DYNAMIC WINES
Biodynamics is an agricultural system first developed by Austrian philosopher Rudolf Steiner at the start of the 20th century. It is based on organic farming, but goes beyond the obvious avoidance of chemicals and synthetic treatments, to a much more holistic and philosophical regard for the land. Some of its tenets cannot easily be explained, including farming by a calendar that respects the earth's magnetic fields and the rhythms of the sun, moon, planets and stars, and working with preparations that seem almost mediaeval: infusions or herbs and minerals, some, indeed, packed inside cow horns and buried underground.
